December 31st, was the very last day to order any of our holiday flavors...Pumpkin Spice, Autumn Delight, Eggnog, Peppermint Mocha, and gingerbread! Our Apple Pie cupcake was featured during the holiday season but will remain on our menu, year round! They are so delicious and resemble little apple pies, as the centers are scooped out & are filled with freshly, mascerated apple slices! They are then, topped with our special, Whipped Ammaretto Frosting. The perfect comfort treat, year round!
Lastly....our January flavor of the month, is Morning Glory! A blueberry, lemon, & ricotta cupcake that is topped with a lemon cream cheese frosting. This cupcake is ridiculously moist & full of flavor! Definitely the perfect morning or anytime treat!
Well, I can't take ALL the credit for this delicious master piece! My good friend/assistant, Melissa Sevilla, suggested that I add the ricotta to the cupcake! Since I have used ricotta cheese in one of my frostings, then of COURSE I can use it in a cupcake! It's the reason why it is one of our most, moist flavors!

In other Cupcake Corner news, we are now looking into purchasing our produce & dairy products from local & organic vendors. I will be checking out the Scripps Ranch Farmer's market this weekend & sampling their produce & dairy products. Who wouldnt want a cupcake made with fresh, organic eggs?:)
