It's been a couple weeks since i've last blogged...been quite busy with baby showers, samplings, & birthday cupcakes! I've also been working on a new idea for my business...a cupcake hostess party! A cupcake hostess will come out to your child's birthday party & provide a hands-on decorating lesson for cupcakes & aprons! We offer three different party packages which will include everything from cupcakes & a wide assortment of decorations, frostings, and piping bags! Also included: pizza, drinks, birthday cake or cupcakes, aprons & paints for the kids to decorate & take home, party bags, and a special birthday crown or Cupcake Corner t-shirt for the birthday celebrant! I met with a few clients over the past couple of weeks for some samplings for future large events. Everything from our TARAmisu & Peanut Butter Cup to Coconut & Lemondrop! For questions about samplings please inquire for more details!
My friend, Caren had a birthday on the 2nd, and I wanted to make her some special cupcakes since she has always been a big supporter of the Cupcake Corner from the very beginning! I made her my Cookies N Cream, and customized a few of the cupcakes with pink, white, and gold decorations. Caren loooves pink! She mentioned Cookies N Cream is now her favorite flavor:)
One of my favorite orders this past week was for Lady Bug & Butterfly cupcakes! I loooove lady bugs & butterflies and have been wanting to make butterfly themed cupcakes for awhile! The client ordered our Classic Yellow cake...half with Chocolate frosting & half with Pink Lemonade frosting.
On Friday the 11th, I had a fun order for Truck Themed birthday cupcakes for a little boy turning 3. I made a variety of different trucks including: monster trucks, a tractor, firetruck, and a garbage truck. The cupcakes were made from whole wheat flour and reduced sugar. They were delicious and flavorful:)
On Saturday, I had two baby shower orders...one of them for my sister-in-law's shower. The first order was for four dozen simple & cute jungle themed cupcakes for a baby boy. My favorite was the little elephant:)
For my sister-In-law, Valerie's shower, I decided to stick to only a few different colors and since there was no specific theme, I made a variety of baby decorations. Valerie chose Orange Cream for the flavor and I made baby foot prints, baby bottles, rattles, and a few other cute, baby decorations. My favorites were the baby rattles & baby foot prints:) The shower was a success and the food was delicious!
Another fabulous couple of weeks for The Cupcake Corner! I have a couple more orders lined up for this upcoming week and then it's off to Costa Rica late Wednesday night for a week for my good friend, Amy's wedding! There's still time to place your order for St. Patrick's day cupcakes if you want them by Wednesday afternoon, just before St. Patrick's Day on thursday the 17th! Otherwise, we will not be taking any orders from Thursday the 17th THROUGH Tuesday the 22nd. For order inquires, please email us and we will respond before Thursday the 17th or after Tuesday, the 22nd!

Princess Cupcakes & Wedding Fun!
This past week was a little crazy with several orders for princess themed cupcakes & cakes, a mini wedding reception for my good friend, Amy and some last minute orders for the popular, Burgundy Velvet & TARAmisu! A lot of preparation went into the designing of the decorations & they all turned out amazing!
The first customized order I had was for three dozen standard cupcakes, all decorated "girly" in purple & pink, with some princess embellishments. I decided to add a crown for just the princess herself;) Pearls & flowers were a must for these cupcakes!!!
Man Power, a staffing agency located in Sorrento Mesa, ordered a few dozen cupcakes for a baby shower they threw for an employee at their facility. They ordered three of our top flavors: Burgundy Velvet, TARAmisu, & Mexican Vanilla Bean, with some of the cupcakes decorated to fit the "baby girl" theme. My favorite cupcakes were the ones with the little pink & yellow baby feet:)
Here's a look at a few of the other orders we had over the past week...
Another "princess/fairy tale" themed order I had was for the birthday of a little girl turning six. I especially enjoyed sculpting the little dragons & sword from fondant. I'm sure these fire breathing dragons brought smiles to many faces:)
My last, "princess" themed order was for another birthday for a little girl who wanted a princess crown on top of her cake. The family ordered a dozen of our scrumptious Strawberries N Cream cupcakes, along with a 4" round chocolate cake, customized especially for the princess herself:) I was more than thrilled with how the crown turned out & it looked amazing on top of the cake!
My good friend, Amy & her fiance Will, wed in a small private ceremony with just family present on Thursday, February 24th, 2011! Congratulations to the beautiful couple! Their big wedding ceremony/celebration will be held in Costa Rica in mid March & I am more than excited & honored to be apart of the wedding party and take part in their celebration.
For their private ceremony here in San Diego, they asked me to cater their reception and of COURSE I was more than thrilled! The order was for eight dozen minis, plus a small, two tiered Chambord & Chocolate cake. The groom is a pilot & on their first date, Will flew Amy to Los Angeles (from San Diego) for lunch! Now THAT is real date!!! Great job Will;) Amy requested to have a plane as their cake topper & I decided to sculpt a small, white plane from fondant. I added a couple of B's on the plane,(last name is Becker) & I think it looked amazing on top of the cake...very unique!
And now, I am soo proud to announce the March flavor of the month! White Chocolate Pear! I have been dying to create this flavor for awhile. This cupcake is truly amazing! The cupcake is made with two different types of pears and premium korintje cinnamon. It's topped with a pear, white chocolate & cream cheese frosting with toffee bits mixed into the frosting, for added crunch! Initially, I was planning on adding the toffee to the cupcake, which would then melt when baking & blend nicely with the pear & cinnamon flavors. I completely forgot to add the toffee pieces until realizing after I had already put the cupcakes into the oven! My amazing assistant, Melissa, mentioned that we should add the toffee to the frosting for added crunch! Genius idea! I ended up loving the texture & taste and decided to keep it that way! I encourage you all to try out this amazing flavor! Valentine's Cupcakes & Cakes
Valentine's Day was a success! I had some really fun, customized orders and I am very pleased with how they all turned out:) One of my orders was for Chocolate Rose & Blondie cupcakes. The whipped ganache frosting on my Chocolate Rose cupcakes is soo delicious & creamy and the blondie cupcakes are always a hit with a rich, pure vanilla taste and creamy vanilla frosting.
Another order I had was for a customized Burgundy Velvet cake. I thought it turned out super cute & the red decor really popped!

These Burgundy Velvet cupcakes below, were customized the day after Valentine's day for a girl scout troop party. I was told the girls thoroughly enjoyed them & that is exactly why I keep doing what I love! If it makes other people happy, then I'm happy:)
I also decided to customize a few cupcakes for friends as valentine's day gifts. Simple yet adorable! I love how the hearts are cascading down on just one side of each cupcake:)
Another busy week ahead of me! I have some really fun orders coming up....three of them for princess cupcakes:) Have a great weekend everyone! Just because Valentine's Day comes once a year, doesn't mean you can't express how much you love someone everyday! Super Bowl Cupcakes & More!
Chicken wings...check. Nachos...check. Pizza...check. Cupcakes?! CHECK! Yes, we DO make amazing customized cupcakes for the Super bowl as well:) On Super Bowl Sunday, I had an order for a dozen of each, Chocolicious & The Blondie with Super bowl customization. These were definiely "manly" cupcakes:)
A lot of people had anticipated that the Steelers would win Super Bowl XLV but the Packers proved them wrong! What a game...maybe the Chargers will have better luck next season and make it to the Superbowl?!:) Hmmm...either way, maybe these cupcakes will bring a smile to your face:)
This past week, I also had the opportunity to customize a couple of birthday cakes, one being a Snickerdoodle cake & the other was an Orange Cream cake topped with an Orange White Chocolate & Cream Cheese frosting that I had baked for my mom's birthday! Soo scrumptious & super moist! I made the Orange Cream cake with whole wheat flour & the best part of all, was that you could not even tell the difference between the whole wheat flour & the white flour that I typically use. I garnished the cake with candied orange twists & candied orange slices as well. The cake was so moist & not too sweet...so perfect! Definitely one of my favs for sure;)
During the middle of the week, I had an order from Miami, Florida for my Cookies N Cream cupcakes. These are definitely one of my favs & are soo incredibly delicious. The cake is my chocolicious cake baked with crushed Newman O cookies (oreos) and topped with an "oreo" cream cheese frosting that is subtle yet so delectable in taste! The cupcakes were ordered for the birthday of a woman that was staying at the Sophia Hotel in Downtown San Diego & were quite the surprise! I even included a special birthday note & the hotel comped a bottle of champange! Definitely made her birthday extra special:)

February Flavor of the Month + Valentine's Cupcakes!
Ok guys...it's the first of the month , you know what that means!! Time to announce the February flavor of the month. Since February is well-known for the month of love, I figured I would come up with a flavor that reflected the theme. With that said, I created a Chocolate Rose cupcake! Made with rose extract & rose water, this seductive cupcake is topped with a chocolate rose ganache frosting! So delicious and rich in chocolate flavor. The ganache frosting is very light, which compliments the cake perfectly. Many times, bakers will create a frosting soo rich & sweet that it overshadows the flavors of the cake. This cupcake is so delicious & light that you wont feel so guilty after eating one or two;) So go ahead & feel free to indulge!
